Tepache ingredients
2 cinnamon stick
5 cardamom pods
2 star anise
1/2 teaspoon turmeric powder
1 tbsp ground ginger
50g fresh ginger
3 tbsp dark brown sugar
Method
1. wash pineapple skins under cold water
2. Please skins and all the other ingredients into a large jar or bottle.
3. Boil then cool enough water to cover all of your ingredients,
4. Once water is cool pour into jar until everything is submerged.
5. Close lid and shake.
6. Flick open lid and cover with cling wrap poking little holes in it as your tepache needs to breath.
7. Sit in cool, dry place for 5 days
8. On the 5th day, give it a gentle shake to release any sediment, strain and pour into a bottle, chill in the fridge until nice and cold.
9. Enjoy over ice as it is or either with soda .. it also pairs very well with a good tequila" 🍳Cooking
